Hooded Bath Towel

I found out I will be attending a very small baby shower for a co-worker, so I have a good opportunity to put my DIY baby gifts together into a nice present:  receiving blankets, burp cloths, and this hooded bath towel from Mickiswing.

It’s kind of hard to tell from the picture, but this turned out really cute.  And once I figured out what I was doing, it probably took only about 15 minutes to sew it up.  It will actually be a bit large for a newborn, but the baby can use it up until kindergarten!  I think I will make a couple more for Christmas presents.

Easy Meatballs

This recipe is from Busy Cooks.  You can use any meatball recipe.  I used 3 pounds of ground beef.  I mixed it up and used my small Pampered Chef scoop to portion out the meatballs.  I don’t spend time rolling out each meatball.  I kind of shape a mound on the scoop and plop it on a cookie sheet, covered with parchment paper.  These are more like meat blobs.  If you need nice round ones for appetizers, you might want to roll them out by hand.   3 pounds made 91 meatballs (30 per pound).  I needed 3 cookie sheets and baked two sheets at a time.

When done, they are a greasy mess.

Let cool and then put in freezer bags – meatballs ready to go for later.   This is a big time saver and they are tasty.  I defrost and use in spaghetti and meatballs and meatball subs.  This is also a great idea when you get a really good deal on ground beef.

The best sales on ground beef are Memorial Day, July Fourth and Labor Day – when people have cookouts.   I like to buy a lot of ground beef and do the following for the freezer:  browned ground beef, taco meat, patties, meat loaf (in foil pans – easy to cook and then pitch) and meatballs.  I never freeze ground beef in its original package because I can make up these other things in advance and it saves so much time when you need the meat for quick meals.
